| Beets Me Crackers |

Kamut is large grain, with a gluten content similar to wheat, but without the allergic problems often associated with wheat. The bright red color makes this a favorite during the holidays.
Ingredient Proportions
2 cup kamut (soaked 8 - 12 hours, sprouted 12 - 24 hours)
1/2 beet
1 red pepper
6 cherry tomatoes or 2 regular tomatoes
2 - 3 tsp. Vege-sal
1 tsp. Granulated garlic
Machine Instructions
Put the closed blank screen over the twin gears. Then attach the pulp discharge casing without the outlet adjusting knob. Place a large enough bowl to catch the droppings from the outlet.
Preparation and Serving Instructions
1. Soak kamut 8 - 12 hours, rinse and let sprout 12 - 24 hours, rinsing as needed.
2. Alternate putting the kamut, beet, red pepper and tomatoes through the machine and into a bowl.
3. Stir into the mixture the spices to taste, and spread the mixture out onto dehydrator trays, covered with teflex, or wax paper. Spread it 1/4 - inch thick, in a rectangular shape, and cut it with a spatula into crackers 2 - inch by 2 inch square or as you prefer.
4. Set the dehydrator at 105 degree F, and dehydrate until crisp, about 8 - 16 hours, depending on weather and climate. Check occasionally, rescore and turn over, taking off the teflex sheet (or wax paper) when the first half is done.
5. Serve warm or store in covered containers.
Preparation Hints
Kamut is a hearty grain. To avoid the machine clogging, use a little at a time, letting the gears pull the grain in gradually. If you put too much in, push it through gently with the plunger, and slow down. |
